As much as I complain about winter, there are a couple reasons that I look forward to it. The number one reason is that I love to have an excuse to be comfy – blankets, sweaters, hot cups of tea, etc…
I’m sure I’ll keep complaining about being cold and about the snow, but instead of wishing winter (and many days of my life) away, I’m going to try to enjoy the stupid stuff that I actually like about it. In this case, I’m snuggling up with my cup of tea and a batch of Ina Garten’s Chunky Banana Bran Muffins.
Banana Bran Muffins are great as a comforting snack when you’re snuggled up with a book, but they’re also great fuel if you happen to need to log some miles like I do today. With a race coming up in little over a month, there’s no way I can put off training just because it’s too cold out. I’ll just need to suck it up and get it done, or else race day will be TERRIBLE.
The best thing about training for a race – the extra miles give me an excuse (perhaps not a legitimate excuse) to eat more muffins than I normally would.
I knew these would be good because Ina has never let me down. In fact, Ina’s known for having easily reproducible and predictable recipes. She loves recipe development and making cookbooks, and she claims that when she cooks, she’s always using a recipe. She sounds like a scientist to me! She’s great.
You know how when you make banana bread, you kind of need to mush up the bananas into the batter, and you need really ripe bananas to make it work? These muffins are different from that. Instead, you make a normal bran muffin batter, and then you add chunks of banana and golden raisins. So… if you like to buy your bananas when they’re still green like I do, then you don’t have to wait a week to make these muffins! Awesome!
You know what else these muffins are good for? They’re good fuel if you happen to race stair climbs… like the American Lung Association Fight for Air Climb which I’ll be spectating tomorrow while Rooster runs! Good luck Rooster!
