Good Monday morning, friends!
Did you have a good Mother’s Day yesterday? I did. My dog got me a card. He’s so thoughtful. Another good thing about our day was the Lemon Italian Cream Cake that we shared with our moms!
Would you be grossed out if I told you that we’re still working on that same bag of lemons? Ok, so they’re very obviously nearing the end of their useful life, and the rest will have to go towards making lemon water because I’m really running out of ideas. And if I keep baking, some people will complain that I’m sabotaging their health. (Ok, that’s fair. I’ll make a vegetable soon.)
Lemon Italian Cream Cake seemed like a good choice for Mother’s Day this year for a couple reasons. Lemon is basically the flavor of spring, and we have Italian mothers! Double whammy!
Bonus feature: it was easy.
Double bonus feature: I had to do some grocery shopping first thing in the morning to pick up a couple items, and the grocery store is SO MUCH MORE AMAZING when you go on Sunday morning instead of Sunday afternoon. We procrastinators have been missing out on catching all those worms for years.
Lemon Italian Cream Cake was a Pinterest find, thanks to my own mom. It can be found on the food blog, An Italian in My Kitchen, which I haven’t had a chance to fully peruse. I’d say that based on my first recipe taste test and the fact that I love the name of this blog and the pretty pictures, I’m definitely going to return.
One of the Mother’s Day gifts this year was a set of adult coloring books. (No, not like dirty coloring books.) If you haven’t already heard of adult coloring, then you’re missing out. It’s all the rage. So yes, we all sat down as a group and colored. And it was amazing.
And nothing helps to complete an adult coloring session quite like dessert. Bust out the Lemon Italian Cream Cake. Although we treated this like dessert following our lunch, it could also be served in a more traditionally Italian fashion as a treat for breakfast.
This cake was light and fluffy, and the lemon flavor was super subtle. I imagine it would have gone remarkably well with a drizzle of something – maybe a raspberry sauce? Mmm. Now I want that.
And, importantly, it looks beautiful! I love food that looks beautiful.
