My ‘Winter’s Not That Bad’ Salad

One of many terrible things about Sunday (other than doing laundry, grocery shopping, and vacuuming) is worrying about what to pack for lunch all week.  This, like many loathsome chores, is especially irritating because of its repetitious nature. Unless you want to literally eat the same thing for lunch every day of your life (an acceptable strategy for breakfast, but not for lunch), then you’re faced with this decision every single Sunday.  And if you also happen to be someone who struggles with making decisions, then this can quickly turn into a insurmountable obstacle, setting you up for a week of frustration and disappointment.  Yes.  I do mean to make it sound that serious.

This week, my solution to the problem (giving me another 7 days before I need to stress out over this crisis again) is what I’m calling a “Winter’s Not That Bad” Salad.  Something that’s kind of a bummer about winter in a cold climate (other than the obvious things) is that the produce is kind of a let down.  It’s not as easy to fill up on fresh fruits and veggies as it is all summer.  However, there are a few things that are good all year, and there are a few things that make their select appearances in the late fall and winter months, and we might as well make the most of those things and enjoy them while they’re here.

Gingerbread Granola

I’m so stinking excited about Christmas coming.  In fact, I’m almost disappointed we’re already so close because that means even less time to look forward to it.  And when am I going to find time to squeeze in opportunities to make all those fun Christmas recipes I pinned?

Deliciously Toasted Pumpkin Seeds

After being woken a tad early this morning by my puking dog, I felt that I might as well use my time to finish my next blog post!

In any case, I might have lied.  I said the pumpkin hand-pies were the last “pumpkin” recipe for a while, and technically they were the last one that used the pumpkin puree itself.  HOWEVER, these pumpkin seeds were also a product of the pumpkin roasting expedition. I’m a firm believer that no pumpkin seed should ever go to waste.  What a shame to roast and harvest a whole pumpkin and then just discard the delicious seeds that pumpkin worked so hard to produce.Roasted Pumpkin Seeds | www.thebahamallama.wordpress.com

This is a new recipe that I made for the first time this year, compliments of my future sister-in-law.  I’ve made plain salty toasted pumpkin seeds before, and I’ve always enjoyed them, but the little extras on these seeds – some Worcestershire sauce and garlic powder, made them WAY better.

The cumbersome part of making pumpkin seeds is definitely cleaning them off.  I like to start by dumping all the pumpkin guts in a big bowl.

Then I fill the bowl with water and use my hands to rinse off and pull out the seeds, leaving the gunk behind.  Feel free to let me know if you’ve found a better way. Obviously I find this process so irritating that I require a glass of wine to get through it.

Once all your seeds are separated, give them a once-over to check for extra pieces of pulp. Then use paper towels to make sure they’re nearly as dry as you can get them. Damp seeds will take longer and struggle to get nice and crispy in the oven.

Mix about 2 cups of the seeds with approximately 2 tbsp of olive oil (or melted butter), 1/2 tbsp of salt, 1/4 tsp of garlic powder, and 2 tsp Worcestershire sauce. Then bake them at 300 on a foil lined baking sheet for about an hour or until they start to turn a little brown.

And if you’re tired of hearing about pumpkins, well TOO BAD.  This is my last recipe inspired by the pumpkin puree we concocted.  For now.  And then, perhaps we’ll move on to Christmas recipes.  (Um… if my December edition of Food Network Magazine ever arrives.)

So, what was I saying?  O yes, pumpkin hand pies.  I made these after dinner one evening.  They seem like they’d be really complicated, but frankly, they’re not.  The filling comes together in a single bowl in minutes. The same is true for the dough. The biggest investment of time and messiness is rolling out the dough, but is that so bad?  It’s 100% worth it.

I’m working on it… Anyways, she includes a recipe for dough, but FYI, I’m sure you can use whatever pie dough suits you. I used my mom’s recipe.  (Hi Mom!!)  But I bet a store-bought dough (if you’re the kind of person who settles for that sort of thing) would work fine too.

It may be December now, but don’t give gingerbread and peppermint all the love.  Let’s not forget about our loyal friend, the pumpkin.

The Much-Anticipated Pumpkin Cheddar Soup Recipe

Bobby Flay’s Banana Bread

Banana bread, as luck would have it, turned out to be a great opportunity for me to practice my food photography!  Plus, banana bread is so classic that it’s worthwhile to try out a few different recipes so you can figure out which one is going to be your favorite, and then it forever becomes “your” banana bread.  This one happens to be Bobby Flay’s recipe.  I’ve never seen Bobby make anything that looked terrible, so I was happy to give it a shot!Bobby Flay's Banana Bread | www.thebahamallama.wordpress.com
