I know you’d never know it from reading my blog, but I promise that I do try to eat food that’s good for me (and not just muffins).
Enough about health food though. Today, I want to share a Chocolate – Chocolate Chip Pound Cake that I tried on a whim one evening. I hate to end a great dinner without something sweet, and if there’s nothing around, you have no choice but to whip something up. One of the best things about baking is that you can almost always concoct something amazing with ingredients you have on hand + Pinterest.
Wow! I almost melted into a chocolately puddle after the first rich, moist, delicious bite. This chocolate pound cake is the kind of dessert that is so amazingly perfect that it’s impossible to be satisfied with any number of bites. It requires super-human will power to peel yourself away from eating one slice after another. Especially when it’s warm out of the oven. And even more especially if it’s warm out of the oven with ice cream on it…
My favorite part is the almost crusty top layer that’s just barely firm to the touch. Wow. But the center of the cake is so buttery soft that it nearly crumbles away as you’re shoveling it in and then delicately melts in your mouth.
These photos are from Valentine’s Day when we last enjoyed this treat, but I can think of at least 364 more reasons to make one. Despite the fact that our household contains only two people, the cake (shamefully) lasted no more than two days. This is why I’m not allowed to bake too often…
I promised the track coach I’d come up with a chocolate-something post a long time ago, and I’m relieved to finally be delivering it. (Sorry I didn’t save you any of the actual cake. It was really good though. Enjoy the pictures.)
