I know you’d never know it from reading my blog, but I promise that I do try to eat food that’s good for me (and not just muffins).

Enough about health food though.  Today, I want to share a Chocolate – Chocolate Chip Pound Cake that I tried on a whim one evening.  I hate to end a great dinner without something sweet, and if there’s nothing around, you have no choice but to whip something up. Buffalo Cauliflower Bites

My Mom’s Chicken Salad

Recipes from your mom and your childhood have a special place in the recipe box.  For starters, in my case they actually exist physically in a recipe box unlike a lot of my other recipes that are scattered around in various places like cookbooks and websites that I can only find through Pinterest if I could just remember which board they’re posted on.

My ‘Winter’s Not That Bad’ Salad

One of many terrible things about Sunday (other than doing laundry, grocery shopping, and vacuuming) is worrying about what to pack for lunch all week.  This, like many loathsome chores, is especially irritating because of its repetitious nature. Unless you want to literally eat the same thing for lunch every day of your life (an acceptable strategy for breakfast, but not for lunch), then you’re faced with this decision every single Sunday.  And if you also happen to be someone who struggles with making decisions, then this can quickly turn into a insurmountable obstacle, setting you up for a week of frustration and disappointment.  Yes.  I do mean to make it sound that serious.

This week, my solution to the problem (giving me another 7 days before I need to stress out over this crisis again) is what I’m calling a “Winter’s Not That Bad” Salad.  Something that’s kind of a bummer about winter in a cold climate (other than the obvious things) is that the produce is kind of a let down.  It’s not as easy to fill up on fresh fruits and veggies as it is all summer.  However, there are a few things that are good all year, and there are a few things that make their select appearances in the late fall and winter months, and we might as well make the most of those things and enjoy them while they’re here.

Deliciously Toasted Pumpkin Seeds

After being woken a tad early this morning by my puking dog, I felt that I might as well use my time to finish my next blog post!

In any case, I might have lied.  I said the pumpkin hand-pies were the last “pumpkin” recipe for a while, and technically they were the last one that used the pumpkin puree itself.  HOWEVER, these pumpkin seeds were also a product of the pumpkin roasting expedition. I’m a firm believer that no pumpkin seed should ever go to waste.  What a shame to roast and harvest a whole pumpkin and then just discard the delicious seeds that pumpkin worked so hard to produce.Roasted Pumpkin Seeds | www.thebahamallama.wordpress.com

This is a new recipe that I made for the first time this year, compliments of my future sister-in-law.  I’ve made plain salty toasted pumpkin seeds before, and I’ve always enjoyed them, but the little extras on these seeds – some Worcestershire sauce and garlic powder, made them WAY better.

The cumbersome part of making pumpkin seeds is definitely cleaning them off.  I like to start by dumping all the pumpkin guts in a big bowl.

Then I fill the bowl with water and use my hands to rinse off and pull out the seeds, leaving the gunk behind.  Feel free to let me know if you’ve found a better way. Obviously I find this process so irritating that I require a glass of wine to get through it.

Once all your seeds are separated, give them a once-over to check for extra pieces of pulp. Then use paper towels to make sure they’re nearly as dry as you can get them. Damp seeds will take longer and struggle to get nice and crispy in the oven.

Mix about 2 cups of the seeds with approximately 2 tbsp of olive oil (or melted butter), 1/2 tbsp of salt, 1/4 tsp of garlic powder, and 2 tsp Worcestershire sauce. Then bake them at 300 on a foil lined baking sheet for about an hour or until they start to turn a little brown.

The Much-Anticipated Pumpkin Cheddar Soup Recipe

I’m sure you’ve been in suspense all week long, especially you, Georgia Peach, wondering when the pumpkin soup recipe would be posted.

Good news – your wait is over!  Let’s enjoy some soup.  I’m sure you’ve got plenty of homemade pumpkin puree to use up.  I actually still have quite a bit, and I’m open to suggestions for how to use it up… You can only eat so much pumpkin soup.
